The Role

We are seeking an experienced chef with deep expertise in authentic Sichuan cuisine, particularly noodle dishes, to take a leading role in our kitchen. This role involves preparing, cooking, and presenting a diverse range of traditional Sichuan dishes while ensuring the highest standards of flavour, authenticity, and quality.

Key Responsibilities

Culinary Leadership

  • Prepare and execute a variety of Sichuan dishes, including cold starters, hot entrees, and hand-pulled or knife-cut noodles.
  • Maintain authenticity by using traditional techniques such as dry-frying, steaming, braising, and wok cooking.
  • Incorporate signature Sichuan ingredients like chilli bean paste (doubanjiang), Sichuan peppercorn, and fermented vegetables.

Kitchen Operations

  • Collaborate with the Head Chef in menu planning and recipe development.
  • Oversee food preparation, kitchen workflow, and efficient time management.
  • Train and mentor junior chefs on Sichuan culinary methods and best practices.

Quality Control

  • Uphold strict hygiene standards and food safety protocols at all times.
  • Manage inventory of specialty Sichuan ingredients and ensure freshness and authenticity.
  • Monitor portion sizes, presentation, and consistency in every dish served.

Team Collaboration

Communicate clearly with kitchen staff in both Mandarin Chinese and English to ensure smooth coordination and accurate execution of dishes.

Contribute to a respectful, multicultural kitchen culture.

What We’re Looking For

  • Minimum 10 years’ professional experience in preparing and cooking traditional Sichuan cuisine.
  • Proven expertise in regional techniques and flavour profiles, especially noodle preparation.
  • Fluency in Mandarin Chinese (essential for recipe accuracy and team communication).
  • Good command of English for workplace collaboration.
  • Strong leadership and mentoring abilities.
