The Role: Executive Sous Chef

We are looking for a passionate and talented Executive Sous Chef to support the Head Chef in leading our culinary team. This role is perfect for a strong leader who is excited to mentor a brigade, contribute creatively to evolving menus, and ensure exceptional food standards across the board.

Key Responsibilities

  • Work closely with the Head Chef to develop and evolve seasonal menus.
  • Lead the kitchen team in the absence of the Head Chef.
  • Oversee food preparation, cooking, plating, and presentation.
  • Inspire and mentor junior chefs, fostering a positive and inclusive kitchen culture.
  • Manage food inventory, ensuring stock control, minimal waste, and cost-efficiency.
  • Uphold and enforce strict hygiene, health, and safety standards.
  • Collaborate with front-of-house teams to ensure smooth service delivery.
  • Support rota planning to meet business demands.
  • Conduct daily kitchen briefings and ensure clear communication throughout the team.
  • Maintain high food quality, taste, and presentation standards at all times.
  • Stay current with industry trends, techniques, and ingredients.

What We’re Looking For

  • 3–5 years of experience in a similar role within a luxury hotel or fine dining setting.
  • Strong culinary skills with an eye for flavour, technique, and detail.
  • Confident leading a fast-paced kitchen and managing daily operations.
  • Excellent team leadership and communication abilities.
  • Knowledge of food safety regulations and hygiene best practices.
  • Fluent in English (spoken and written).
  • Flexibility to work varied shifts, including weekends and bank holidays.
