Our food philosophy is inspired by founder Prue Freeman’s childhood on her sheep farm and summers on the beach. We focus on fresh, simple Mediterranean ingredients enhanced with exciting Asian flavours. Every dish is carefully prepared in-house from scratch, ensuring freshness, quality, and consistency across all sites.
Role Overview
We are seeking an experienced, energetic, and upbeat General Manager to oversee high-volume operations across one of our flagship venues. This role is ideal for someone who thrives in a dynamic environment, inspires their team, and is passionate about delivering exceptional customer experiences.
Key Responsibilities
Operations & Leadership
- Lead day-to-day operations, ensuring smooth service delivery and operational efficiency.
- Supervise, mentor, and motivate front-of-house and kitchen teams, fostering a collaborative and positive workplace.
- Maintain stock levels, manage orders, and control waste in line with budget and site requirements.
- Ensure all food preparation, storage, and service comply with legal and hygiene standards: Gov.uk – Food Business Regulations
Customer Experience
- Deliver exceptional customer service reflecting the warm, friendly Australian spirit of the Daisy Green Collection.
- Present menus and explain the business philosophy to customers and colleagues.
- Monitor service quality and consistency to maintain high customer satisfaction.
Financial Management
- Achieve site revenue and profitability targets, monitoring KPIs, and implementing action plans to address underperformance.
- Oversee Tronc allocation, tips, and bonus schemes.
Health & Safety & Compliance
- Ensure compliance with all health, safety, and food hygiene legislation: Health and Safety Executive – Hospitality Guidance
- Maintain up-to-date knowledge of UK employment law and HR regulations: Gov.uk – Employment Rights
- Ensure adherence to licensing and alcohol service laws: Gov.uk – Alcohol Licensing
Person Specification
Skills & Attributes
- Passionate about quality food, artisan coffee, and premium spirits.
- Strong knowledge of classic cocktails and spirits.
- Excellent communication, interpersonal, and team leadership skills.
- Energetic, proactive, and motivated to deliver the best results.
- Flexible, reliable, and able to work under pressure.
- Commercially aware, with experience managing high-volume operations.
Qualifications & Requirements
- Full UK visa eligibility.
- Knowledge of Food Safety Standards: Food Standards Agency – Level 2 Food Safety
- Experience in stock management, financial control, and high-volume hospitality operations.
