University Arms is a 192-bedroom design-led hotel located in the centre of Cambridge, United Kingdom. The University Arms is Cambridge’s oldest hotel, having opened as a Coaching Inn in 1834. What will you be doing?
The Chef de Partie is a member of the brigade team who contributes to the overall efficient functioning of the kitchen, ensuring that each food item leaving the kitchen fulfils the hotel’s quality standards. You will maintain the highest standards and consistent quality in daily preparation while staying up to date on new goods, recipes, and preparation processes. You will assist the Head Chef in establishing standards throughout the kitchen. Your responsibilities as Chef de Partie will include, but are not limited to:
THE DUTIES
- Being a member of the kitchen brigade, aiding the Head Chef with communication and supervision as needed.
- Ensure that food quality, food preparation, and high standards are maintained for all dishes made in order to provide an exceptional guest experience.
- Prepare, oversee, and cook at assigned work stations.
- Assist with stock orders on a daily and weekly basis, following stock control processes.
- Assist in receiving and storing all necessary food and non-food items.
- Maintain compliance with all Health and Safety protocols and food hygiene systems in place.
- Work with the Head and Sous Chefs to create menus and daily meal planning.
- In the kitchen, supervise the food production of commis chefs and demi chefs.
- Fill in for the Sous Chef when he is not present.
- Get on-the-job training for the Commis and Demi CDPs.
- Work on other portions as needed, and participate in cross-training when recommended.
- Maintain a “clean as you go” approach and keep work spaces and refrigerators immaculate at all times (lead by example).
- Liaise with the restaurant manager, supervisors, and wait staff as needed to ensure maximum visitor satisfaction.
- Help to control costs, increase gross profit margins, and achieve other departmental and financial goals.
- Please report any maintenance, hygiene, or hazard issues.
- Ensure that cleaning checklists are followed, and carry out cleaning duties as needed.
- Checking stock quality for freshness, weight, use-by dates, and so on, and communicating any faults to the Head Chef or Sous Chef while they are not there.
WHAT DO WE LOOK FOR IN YOU?
- Experience working as a Chef de Partie in a four- or five-star restaurant.
- Strong understanding of cooking techniques, kitchen equipment, and best practices.
- Competent in both verbal and written English.
- Must be able to work a flexible schedule, including early and late shifts, weekends, and bank holidays.
- A thorough understanding of food products, recipes, and specific meal preparation.
- Approachable person with a hands-on, can-do attitude.
- Can provide consistent service in accordance with company recipes and requirements.
- Passionate about offering the highest level of service for restaurants, banquets, and room service.
- Encourages excellent teamwork across the kitchen to attain high standards in all areas through communication and support.

Salary: £26,685.75, plus £5,746 Tronc.
